Crispy Rosemary Roasted Fingerling Potatoes
Ingredients
3lb Fingerling Potatoes, cut in quarters
2 tablespoons olive oil or melted Ghee
2 teaspoons salt
1 teaspoon freshly ground pepper
Fresh rosemary
1 shallot, chopped
2 cloves garlic, minced
Preheat oven to 425°F
Bring a large pot of water to a boil
Cut Potatoes into Quarters and place in a steamer Basket over 1 inch of simmering water. About 6-10m until slightly softened.
Drain Potatoes thoroughly in a colander
Let the Potatoes dry out further in a colander over a pot with no water.
Place the pot over the warm stove & turn the heat off allowing the potatoes to further dry out.
On a large baking sheet, combine the parboiled potatoes with salt, pepper, rosemary, shallot, garlic and oil.
Spread the potatoes into one even layer for maximum crispness.
Roast for about 40m minutes or until the potatoes have browned around the edges
Season with salt to taste.
