For optimum flavor and quality, Hudson Valley Fresh products are pasteurized for only 20 seconds at 166 degrees. That’s in contrast to much of the industrial milks, which are ultra-pasteurized, meaning heated to 280F – changing not only the flavor of the milk but the nature of the protein.
